Chocolate Cake with Vegan Chocolate Ganache

Avocado Basil Pesto (Nut Free + Vegan)
Having pesto on pasta is something I've never been able to enjoy, due to all commercial pestos containing either cashew or pine nuts, both of which I am allergic to. Now throw into the mix that most pestos aren't vegan due to the inclusion of parmesan cheese and I'm at a loss when I want to enjoy a simple pasta-pesto mix. But, there is a really easy solution to that and it's this recipe for Avocado Basil Pesto, which is nut free AND vegan!

Gluten Free Brownies (Vegan + Nut Free)
If you've been reading my blog recently, you'll see I've been trying out eating a low/no gluten diet. Whilst I haven't been strictly no gluten, I have enjoyed trying out ways to reduce my gluten intake whilst still making tasty treats. Brownies are something I really enjoy making and was keen to try out making a gluten free version of. Gluten Free + Vegan Chocolate Cake (Nut Free)
This was a big, new, scary challenge for me. Past attempts at making anything gluten free have not gone well for me - I'm talking dry, falling apart cakes that just did not taste great. Last week I was invited to attend a birthday party for my sister-in-law and her fiancé and I offered to make a cake for them. This was a big take-on for me, as I needed to make it vegan and gluten free to be able to suit everyone's dietary needs at the party. Well, I'm glad to say it turned out pretty well and everyone said it was super tasty!! This recipe for a gluten free and vegan chocolate cake doesn't require any fancy ingredients that you can't find at most good supermarkets, always a bonus!

Tofu + Vegetable Stir Fry (Vegan + Gluten Free)
I've been making an effort to eat healthier and part of that meant starting to meal prep. Probably 95% of the time, I have leftovers from the night before for lunch the next day, but sometimes when we can't be bothered to cook a proper meal in the evening it leaves me without a lunch the next day. I decided that to avoid this, I would meal prep for the week on a Sunday, so that I had five lunches sat waiting for me in the fridge.

No Bake Cacao + Goji Berry Energy Bars (Vegan, Gluten Free + Nut Free)
I've been trying to go through my diet and take out anything that isn't healthy, or at least a healthier option. That meant that rather than snacking on my beloved Fry's Chocolate Creme bars, I turned to cereal bars. I looked out for ones which are vegan, nut free and gluten free (we'll come to that) and there are a surprisingly large amount of options out there! BUT they are not cheap. You're ending up paying at least £2 (unless you get them on offer) for three bars, which is a little too expensive for my liking. I decided I should have a go at making them myself, which also meant I could really see all the ingredients in them too. So here we are, my recipe for no bake cacao and goji berry energy bars, that are vegan, gluten free and nut free!

Vegan Blueberry Donuts
I seem to always have a stock of frozen fruit in. I'm always making smoothies or brownies with them, and I went through a phase (who remembers?) of making donuts on the regular, so I figured why not have a go at combining the two?! Vegan Teriyaki Tofu with Veggies
I've tried to be a little more creative with the meals I eat, so I had a scroll through my Pinterest feed for inspiration to see if any of the many recipes I've saved catches my eye. Vegan Raspberry Brownies

Vegan Oreo Cake
I made a cake very similar to this over 4 years ago for a friends birthday. At the time I wasn't vegan so obviously it was riddled with non-vegan ingredients. Recently I was having a brainstorm of things that I've made in the past that I wanted to "veganise". This Oreo cake came to mind, as Oreos are one of those "accidentally vegan" foods, and then I'd just need to make a chocolate cake and use the readily available vegan butter and dairy free milks that are everywhere nowadays.

Vegan Jaffa Cakes
If you haven't heard of Jaffa Cakes before, firstly where have you been?! Secondly, they're the source of great debate. Let me explain, they're a cake (or biscuit), topped with marmalade and a layer of chocolate. They're pretty well known in the UK, and I bet nearly every British kid had a snack pack of these placed in their lunch box for school at one point or another. I decided to recreate these but make them vegan, I used dark chocolate and a simple vanilla sponge for the base, with a dollop or marmalade in the middle.

These Vegan Chocolate Banana Bread Muffins are really something else - the combination of chocolate and banana is one I use regularly, although it can take a little bit of skill to master. Not sure if I should call it skill, but rather careful mixing, as the chocolate and banana can make the batter a little heavy and more difficult to bake, don't let this deter you from making it though, I promise it's worth the effort!

Vegan Lentil Bolognese
Making bolognese is somewhat of a staple for me, it's one of the easiest recipes to make and no matter what your cooking ability it's a delicious meal you can rustle up in no time at all. However, a traditional bolognese calls for mince and as a vegan I'm not for that! So I figured why not substitute lentils in place of the mince and make it to my usual recipe and see how it turned out, and I was very pleased with the results!

Fluffy Vegan Blueberry Pancakes
Pancakes are a firm favourite of mine. It's super quick to whisk together a mixture then fry some up, and it makes breakfast 100 times more interesting. These are super fluffy vegan blueberry pancakes, American style (aka thick) rather than French style crepes. In my personal opinion, fluffy pancakes knock crepes out of the park, as you can really stack them up and add plenty of toppings.

10 Kitchen Tools Every Baker Needs
I've been baking for most of my life, pretty much since I could stand up and mix a cake, I've been helping my parents out with their baking (also meant I got to lick the bowl 😋), so I figured why not write a list of kitchen tools that every baker needs!
As someone who's got their fair share of experience baking (but by no means am I an expert!) I thought that as my blog is pretty much built around baking, with occasional savoury recipes, I had a good knowledge of what you need in you kitchen to get your bake on, and what really isn't that necessary. These Apple Crumble Muffins are fluffy, tasty, easy to make and an all-round winner really! I have a love for muffins, they're warming and a suitable portion size that you can pop one in your lunch box or sneak one throughout the day without ruining your appetite - dreamy stuff!
