Here we go again with another What I Ate Wednesday. I'll admit, I made a conscious effort to make this different to last weeks post, as I am definitely guilty of eating the same meals over and over! I find it especially difficult to come up with new meals I can have for lunch each day, because I need something that is easily put into a tupperware box to take to work with me.

Five Ingredient Chocolate Crispie Bars ~Vegan~
I haven't had a rice crispie bar in years. As a kid, I remember having a "Squares Rice Krispie Treat" put in my lunch box when I went on school trips, and they were always the best thing in the box. So, recently I decided I was going to make these and make them vegan.

Vegan Banana Bread
One grey Saturday morning I noticed that we had some bananas that were looking pretty ripe. This meant I had a few options. Firstly, make a load of banana smoothies, although I was lacking the spinach and other fruits that I needed (and it was icy and snowy outside so I wasn't going to the shops). Secondly, freeze the bananas and save for a later date (I'm talking banana nice cream). Thirdly, make banana bread. I settled on the last one as it meant I got to make something warming and then rather than having to wait!

What I Ate Wednesday 24.01.18
I've read my fair share of "What I ate in a day" posts as well as watched countless YouTube videos, so I figured why don't I start writing my own?! This also helps brighten up my midweek rut at work, I dealt with some interesting customers today to say the least... Anyway, back to the post!

Vegan Chocolate Chip Cookies
To be totally honest with you, the reason I made these cookies was simply that I wanted comfort food! Since turning vegan I've been unable to simply pop down to the shops and grab a bag of fresh baked cookies from the bakery section, I have to put more effort into getting my sugar fix!

Dinner at The Bohemian, Newcastle upon Tyne UK
I wanted to change this blog up a little bit, and thought I might start reviewing/ just talking about the different restaurants I eat at. Recently I went to eat "The Bohemian" in Newcastle upon Tyne, UK. I'd been there once previously and enjoyed how all the options on the menu were vegetarian (could be made vegan) or fully vegan. They offered starters, mains, desserts and even vegan cocktails!!

Rice Paper Wraps
I started a new job last week, and with it being New Year as well I wanted to try new things and get into a better habit of eating healthy (mostly..). This led to me brainstorming things which I could take for lunch that didn't necessarily need heating up (the microwave queue can be terrible!) and weren't too smelly. I remembered these spring rolls which I made a few months ago and had completely forgotten about!

Vegan Chocolate Orange Cake
My mums birthday is on Christmas Eve, and since I was around 16 the duties of making her birthday cake have fallen to me. This year she requested a chocolate orange cake, probably wanting me to make a cake using Terry's Chocolate Orange chocolate, however as this is the first time I've been vegan at Christmas I took it as "challenge accepted" and decided to make a vegan one!
