Vegan Yorkshire Puddings
Since giving up dairy and eggs, there has been something noticeably missing from my Sunday dinners, and that would be Yorkshire puddings. I'd mastered putting together my own meat free, egg free and dairy free roast dinners, with some good vegan sausages, lots of roast veggies and plenty of gravy. BUT, a key item was missing, and I haven't seen any shops selling vegan Yorkshire puddings so I decided it was time to make my own.

Chickpea Curry
I've been promising this recipe for the longest time now, you may have spotted it on my Instagram account and I said I'd be writing up the recipe soon but fully due to my own poor planning it took far too long to get this recipe on my blog... well the wait is over now! Here is a recipe for a super tasty Chickpea Curry! It's fully vegan, nut free, gluten free but not lacking in any of the tasty curry spices you'd expect!

Vegan Mushroom and Asparagus Risotto
This is an easy to follow recipe for a delicious vegan mushroom and asparagus risotto, and as with all my other recipes it doesn't call for any unusual ingredients! Honestly it's the most annoying thing when you come to make a recipe and it calls for some hard to come by ingredient or a really expensive ingredient! The great thing about a risotto is you can really add whichever ingredients you have available - I've made it with aubergine and peas before but you can add in anything you have available (within reason!).

This recipe for an easy red lentil daal is something to have in your repertoire of quick but tasty recipes that are guaranteed to provide the food fuel you need and also satisfy your tastebuds! Once you get to know the recipe you don't really need to weigh out ingredients, instead you can "eyeball it" and add as many lentils and spices as you see necessary. Avocado Basil Pesto (Nut Free + Vegan)
Having pesto on pasta is something I've never been able to enjoy, due to all commercial pestos containing either cashew or pine nuts, both of which I am allergic to. Now throw into the mix that most pestos aren't vegan due to the inclusion of parmesan cheese and I'm at a loss when I want to enjoy a simple pasta-pesto mix. But, there is a really easy solution to that and it's this recipe for Avocado Basil Pesto, which is nut free AND vegan!

One Pot Chilli with Quinoa (Vegan + Gluten Free)

Tofu + Vegetable Stir Fry (Vegan + Gluten Free)
I've been making an effort to eat healthier and part of that meant starting to meal prep. Probably 95% of the time, I have leftovers from the night before for lunch the next day, but sometimes when we can't be bothered to cook a proper meal in the evening it leaves me without a lunch the next day. I decided that to avoid this, I would meal prep for the week on a Sunday, so that I had five lunches sat waiting for me in the fridge.

Vegan Teriyaki Tofu with Veggies
I've tried to be a little more creative with the meals I eat, so I had a scroll through my Pinterest feed for inspiration to see if any of the many recipes I've saved catches my eye. I saw one for Tofu Teriyaki and remembered a time when I used to eat meat and loved the teriyaki chicken my Dad used to make me, so knew I was on to a winner! I had a browse of the ingredients I had in and put together this little recipe for a delicious vegan teriyaki tofu with veggies - an excellent dinner treat!

Vegan Lentil Bolognese
Making bolognese is somewhat of a staple for me, it's one of the easiest recipes to make and no matter what your cooking ability it's a delicious meal you can rustle up in no time at all. However, a traditional bolognese calls for mince and as a vegan I'm not for that! So I figured why not substitute lentils in place of the mince and make it to my usual recipe and see how it turned out, and I was very pleased with the results!

Easy Homemade Vegan Ramen
This is a recipe for an easy homemade vegan ramen, which requires very few ingredients, depending on how fancy you want to make it! I really enjoy using onions, mushrooms, carrot and gyoza in my ramen, however you could use tofu, bok choy, fresh chillis... the list is endless!

Vegan Bean Chilli
I feel like being able to make a chilli is one of those staple means any mediocre cook should be able of, and I'm talking about using one of those pre-made spice sachets! This is such a staple meal for me, I practically lived off it in my final year of university! A chilli is one of those meals where you can eat it in so many different ways, the most obvious one being with rice, but you could also enjoy with pasta, quinoa, mashed potatoes (it can't just be me that does this). You can also rework the chilli into different meals, so have it wrapped up in a burrito with some guacamole, alongside some tortilla chips - any way you like really!

Vegan Chickpea "Tuna" Mayo Sandwich
Wow.
Who would have thought that the humble chickpea could me used to make such a delicious sandwich?! I'll admit that I really didn't, but having heard the buzz about chickpea "tuna" mayo sandwiches, I just knew it was something that I had to try for myself! Another thing I love about this sandwich is that it's just plants. Yes, I realise that might sound stupid considering I eat a vegan diet, but what I mean is that there's no fake processed meats in here, just hearty plant goodness! I'm not against fake meats, but I just appreciate that such a simple set of ingredients can create something so tasty!

Vegan Spicy BBQ Cauliflower "Wings"
I seem to have been seeing vegan cauliflower wings everywhere at the moment, and it was some sort of sign saying to me that I need to try them! You may have seen my review of the Grumpy Panda Diner in Newcastle upon Tyne, where I got to sample my first cauliflower wings, and they were delicious! In addition to this, my work friend brought in her own cauliflower wings (check our her blog) and I just knew I had to have my own go at making them! Cauliflower is actually something I flat out refuse to eat, just because I find it so boring! But I promise you, with this sauce you won't find cauliflower boring anymore!! (No offence if you like cauliflower as it, it's just my personal opinion!).

Rice Paper Wraps
I started a new job last week, and with it being New Year as well I wanted to try new things and get into a better habit of eating healthy (mostly..). This led to me brainstorming things which I could take for lunch that didn't necessarily need heating up (the microwave queue can be terrible!) and weren't too smelly. I remembered these spring rolls which I made a few months ago and had completely forgotten about!
