Black Forest Brownies ~ Vegan ~

So this recipe idea might seem a little familiar, if it does, you've probably seen my recipe for Raspberry Brownies. I'll admit this is pretty much the same recipe, with a few tweaks of the ingredients and the use of some different fruits. It may be a little cheeky just tweaking one of my own recipes, but to be honest if a recipe works why not play around with it! There's always room for improvement, and in the wonderful world of brownies why not see if you can make something utterly delicious?!

I made these brownies as a house warming treat for a friend, who is dairy free so gratefully appreciated them! I love how easy it is to make vegan baked goods and to be able to share them with non vegans who had absolutely no complaints about them. Does anyone else find it really satisfying when you can make vegan brownies, cookies cake etc. and they're completely cruelty free and free from all then nasty animal based ingredients. Even if you're not vegan, give these brownies a try, dairy free ingredients are getting super easy to find in supermarkets these days, and try being a little more cruelty free :)

Black forest gateau is a pretty famous cake flavour, and my boyfriend often request I make it. I'm not the biggest fan of it and to be honest I don't even know how I'd go about making the cream that is a key component of the cake, so brownies seemed like the next best option!

Black Forest Brownies ~ Vegan ~


Total time: 45 Minutes Plus Cooling
Yield: 16 Brownies
Ingredients
  • 200g Dark Chocolate
  • 150g Soft Light Brown Sugar
  • 85g Dairy-Free Butter
  • 200g Self Raising Flour
  • 3 Tbsp Cocoa Powder
  • 215ml Soya Milk (or other dairy free milk)
  • 175g Black Forest Fruits Frozen Mix (Blueberries, blackcurrants, redcurrants, raspberries etc.)
Cooking Directions
  1. Preheat your oven to 180˚ celsius. Grease and line an 8-inch square baking pan.
  2. Melt the chocolate, sugar and butter together.
  3. In a large mixing bowl, sift together the flour and cocoa powder.
  4. Pour in the chocolate mixture, stirring well to combine.
  5. Fold in the milk and vanilla extract, until a smooth mixture is formed.
  6. Fold in 3/4 of the frozen fruits into the mixture.
  7. Spoon the mixture into the baking pan, then top with the remaining fruit.
  8. Bake for 30-35 minutes, or longer until the brownies are set but still soft. About 20 minutes into baking, cover the brownies with foil to make sure the fruits don't burn.
  9. Leave to cool for a few minutes in the tin, before transferring to a wire cooling rack to cool completely (still in the greaseproof paper).
  10. Once completely cooled, cut into squares and enjoy!
