Avocado Basil Pesto (Nut Free + Vegan)
Having pesto on pasta is something I've never been able to enjoy, due to all commercial pestos containing either cashew or pine nuts, both of which I am allergic to. Now throw into the mix that most pestos aren't vegan due to the inclusion of parmesan cheese and I'm at a loss when I want to enjoy a simple pasta-pesto mix. But, there is a really easy solution to that and it's this recipe for Avocado Basil Pesto, which is nut free AND vegan!

Vegan Gluten Free Pancakes (Three Ingredients)
Continuing on with my adventures in gluten free cooking, I've successfully made vegan, gluten free pancakes! This is a super easy recipe that makes light and fluffy pancakes and they make the perfect Sunday morning breakfast treat. My mornings normally consist of porridge or toast, so when I get the chance I love to splurge and make myself something more indulgent like this.

One Pot Chilli with Quinoa (Vegan + Gluten Free)

No Bake Cacao + Goji Berry Energy Bars (Vegan, Gluten Free + Nut Free)
I’ve been looking more closely at the snacks I buy and decided to swap my usual treats for something a little different. Instead of reaching for my favourite Fry’s Chocolate Creme bars, I started picking up cereal bars that fit my preferences - vegan, nut free and gluten free. There are actually loads of options out there now! The only downside? They’re pricey. You’re often paying at least £2 for just three bars (unless they’re on offer), which soon adds up.

Rice Paper Wraps
I started a new job last week, and with it being New Year as well I wanted to try new things and get into a better habit of eating healthy (mostly..). This led to me brainstorming things which I could take for lunch that didn't necessarily need heating up (the microwave queue can be terrible!) and weren't too smelly. I remembered these spring rolls which I made a few months ago and had completely forgotten about!
