A few years ago I had some friends over for a movie night at Christmas time and my friend brought me some shortbread made to look like reindeer, with chocolate covered pretzel antlers and cute little red noses. Now that we're getting into Autumn I thought it was time to start on the more seasonal flavours, such as cinnamon, ginger and orange! That's where this idea for these Orange Biscuits came from. They're perceived as the boring choice, almost always the last pack of bakery cookies you see in the supermarket after all the "fun" chocolatey ones have gone. Vegan Jaffa Cakes

If you haven't heard of Jaffa Cakes before, firstly where have you been?! Secondly, they're the source of great debate. Let me explain, they're a cake (or biscuit), topped with marmalade and a layer of chocolate. They're pretty well known in the UK, and I bet nearly every British kid had a snack pack of these placed in their lunch box for school at one point or another. I decided to recreate these but make them vegan, I used dark chocolate and a simple vanilla sponge for the base, with a dollop or marmalade in the middle.

Easy Vegan Shortbread

Chocolate Crinkle Cookies - Vegan!

These cookies are a real eye-catcher - and they're tasty too! The outside is crunchy but the inside remains gooey and soft. I used to make these cookies all the time before I went vegan, however a main component of them is eggs, and I wasn't sure how they would turn out without that - this was also my first time using an "egg replacer", luckily it went well!

Granny's Ginger Biscuits

 

As the recipe name suggests, this is a recipe given to me by my Granny - and I'm very thankful for it! These ginger biscuits are more like ginger snaps, with the syrup making the biscuits chewy and giving them a "snap". My Granny is one of the people who got me into baking, as a child I used to make these biscuits with her and I remember they would be stored in a tin beside the dining table - I was forever trying to sneakily take one without anyone noticing!

Neapolitan Cookies - Non Vegan


As a child one of my favourite ice cream flavours was neapolitan. The mix of chocolate (my favourite thing ever), strawberry and vanilla meant I was able to enjoy three of my favourite flavours, in ice cream! The idea for neapolitan cookies came to me whilst shopping at the weekend. I had just put packets of chocolate chips intended for regular chocolate chip cookies in my basket when I saw neapolitan ice cream. I thought to myself, "Imagine if I could make cookies with the neapolitan flavours in", and my next baking adventure was ready.
