Blueberry and Lime Cake (Vegan + Nut Free)

Blueberry and Lime Cake (Vegan + Nut Free)

This Blueberry and Lime Cake is honestly such a delicious treat - it's super soft and fluffy cake is paired beautifully with the zingy blueberry and lime flavours. Blueberry and lime together is a combination I hadn't thought of trying up until now, but definitely will in future!

Chocolate Cake with Vegan Chocolate Ganache

This cake is the proof that being vegan doesn't mean you having to miss out on anything - and that includes a good chocolate ganache! This recipe is super simple with no "fancy" ingredients (that's what we like!) and it makes the perfect celebration cake! Ridiculously easy to make and the ganache only calls for two ingredients, you really need to try this yourself to believe how good it is!

Gluten Free + Vegan Chocolate Cake (Nut Free)

This was a big, new, scary challenge for me. Past attempts at making anything gluten free have not gone well for me - I'm talking dry, falling apart cakes that just did not taste great. Last week I was invited to attend a birthday party for my sister-in-law and her fiancé and I offered to make a cake for them. This was a big take-on for me, as I needed to make it vegan and gluten free to be able to suit everyone's dietary needs at the party. Well, I'm glad to say it turned out pretty well and everyone said it was super tasty!! This recipe for a gluten free and vegan chocolate cake doesn't require any fancy ingredients that you can't find at most good supermarkets, always a bonus!

Vegan Coffee Cake

I haven't posted in a while, and for that I must apologise. I know excuses are useless, so all I can do is promise I will try better in the future! Here is a good recipe to come back to, a gorgeously tasty coffee cake that makes a decadent afternoon treat (or anytime of the day treat!).

Vegan Oreo Cake

I made a cake very similar to this over 4 years ago for a friends birthday. At the time I wasn't vegan so obviously it was riddled with non-vegan ingredients. Recently I was having a brainstorm of things that I've made in the past that I wanted to "veganise". This Oreo cake came to mind, as Oreos are one of those "accidentally vegan" foods, and then I'd just need to make a chocolate cake and use the readily available vegan butter and dairy free milks that are everywhere nowadays.

Vegan Jaffa Cakes

If you haven't heard of Jaffa Cakes before, firstly where have you been?! Secondly, they're the source of great debate. Let me explain, they're a cake (or biscuit), topped with marmalade and a layer of chocolate. They're pretty well known in the UK, and I bet nearly every British kid had a snack pack of these placed in their lunch box for school at one point or another. I decided to recreate these but make them vegan, I used dark chocolate and a simple vanilla sponge for the base, with a dollop or marmalade in the middle.

Vegan Victoria Sponge Cake

A Victoria sponge is a classic part of British afternoon tea, and something you should definitely have in your repertoire of cakes. This one is vegan, being made without any eggs or dairy, and it's filled with a layer of vegan vanilla buttercream and strawberry jam.

Vegan Chocolate Fudge Cake

I don't even know where to start with this cake.

Just look at that icing.

This is quite possibly one of the yummiest cakes I have ever made and I am so pleased to be able to share it with you all.

Vegan Carrot Cake with Cream Cheese Frosting

I'm going to come straight out and say it, I don't like making carrot cakes.

Every time I've tried in the past, it's always been so tedious to get the carrots grated (yes I do own a food processor), and no matter what I try, the cream cheese frosting always fails. Miserably fails. I'm talking it fails so much it makes me grumpy.

Vegan Lotus Biscoff Cake

Mothers Day was a few weeks ago (at least the on we celebrate here in the UK was) and instead of doing the traditional buying chocolate or flowers I thought I'd make my Mum a cake with two of her favourite things; chocolate and Lotus Biscoff Spread

Chocolate Beetroot Cake (Vegan)

I made this Chocolate Beetroot Cake for my parents' 30th Wedding Anniversary, and it went down a treat! This was the first time I had attempted making a vegan cake since turning vegan and thank goodness it worked!

Vegan Chocolate and Banana Bread

This chocolate and banana cake is something I used to make all the time a few years ago. Since then I've cut out dairy and eggs, so I've had to improvise a bit in order to still make such a rich and tasty cake.

Vegan Chocolate and Vanilla Marble Cake

The humble marble cake is one of those cakes that looks impressive, suggesting it could be complex to make, BUT it is actually incredibly easy to make!

I've been making marble cakes for a few years now, however this was as a non vegan, but seeing as though I've been making cakes as a vegan for a while now, I figured why not make a marble cake!

Vegan Lemon Drizzle Cake

Vegan Lemon Drizzle Cake

I’m going to start by being completely honest. I don’t like lemons.

Ever since I was younger they’ve just never been a favourite of mine, I always found the taste too strong and just something that didn’t sit well with me. However, lemon drizzle cake is my Grandad’s favourite, and I love taking cakes to my Grandparents, so for years I’ve been making lemon drizzle cakes and taking them to their house, but always refusing to eat any.

Blueberry Loaf Cake with a White Chocolate Topping

Last week whilst food shopping I spur of the moment picked up some blueberries with no real idea what I was going to make with them, which meant they ended up going in the freezer to prevent them going off whilst I decided what to do with them. The next day I picked up some vegan white chocolate, again with no clear idea what I was doing with it. Both these ingredients sat in the back of my mind for a few days before I decided that I would be making a loaf cake with the blueberries, as blueberry muffins are something I already knew I could do (and they've already been featured on my blog...) and I'd never made a blueberry loaf cake, ever!

Vegan Banana Bread

One grey Saturday morning I noticed that we had some bananas that were looking pretty ripe. This meant I had a few options. Firstly, make a load of banana smoothies, although I was lacking the spinach and other fruits that I needed (and it was icy and snowy outside so I wasn't going to the shops). Secondly, freeze the bananas and save for a later date (I'm talking banana nice cream). Thirdly, make banana bread. I settled on the last one as it meant I got to make something warming and then rather than having to wait!

Vegan Chocolate Orange Cake

My mums birthday is on Christmas Eve, and since I was around 16 the duties of making her birthday cake have fallen to me. This year she requested a chocolate orange cake, probably wanting me to make a cake using Terry's Chocolate Orange chocolate, however as this is the first time I've been vegan at Christmas I took it as "challenge accepted" and decided to make a vegan one!

Vegan Apple Cake

Today I'm sharing with you a recipe for an apple cake that will warm you up from the cold world outside (at least it's cold where I am!). I realise that Autumn is ending and Winter fast approaching, but in the UK it's basically already Winter! Apple's are a staple Autumn/ Winter flavour, so I thought I'd make this apple cake to enjoy as I curl up with my hot water bottle and a book (currently reading this excellent book).

Vegan Ginger Cake

In the run up to Christmas I like to start incorporating more "Christmassy" flavours such as ginger, cinnamon, cranberry and all the yummy spices! That's where this ginger cake comes in - I fancied a warming cake with a hint of Christmas!
