I haven't had a rice crispie bar in years. As a kid, I remember having a "Squares Rice Krispie Treat" put in my lunch box when I went on school trips, and they were always the best thing in the box. So, recently I decided I was going to make these and make them vegan.
Now, making rice crispie bars generally involves melting marshmallows and stirring in the rice crispie cereal. However, I wasn't prepared to spend a small fortune on vegan marshmallows (they're not cheap for how many you get in a packet!) so I made alternative crispie bars using melted dark chocolate, coconut oil, agave syrup and vegetable oil. So, whilst they may not be your traditional rice crispie treats, they still turned out pretty amazing!
These are perhaps one of the most simple recipes I've posted on here, as they only require 5 ingredients and take maximum 10 minutes of actual baking time (if you can call melting and stirring baking!). This is perfect for anyone looking for a quick and easy recipe for yummy treats with ingredients that aren't too obscure or difficult to get hold of. Enjoy!

Yield: 8 PiecesIngredients
- 180g Dark Chocolate
- 4 tsp Coconut Oil
- 2 tsp Agave Syrup
- 3 tbsp Vegetable Oil
- 80g Rice Crispie Cereal
- In a microwaveable bowl, melt together the chocolate and coconut oil in the microwave in 30 second increments (to avoid the chocolate turning). Once fully melted, stir in the vegetable oil gradually.
- Pour the rice crispie cereal into a bowl, then pour on top the chocolate mixture and stir well.
- Line an 8-inch square tin with clingfilm, then pour in the mixture. Leave to set in the fridge for at least 1 hour until hard. Cut into squares and enjoy!
