Yes, I feel strange writing that, but really I feel it's the only suitable way to describe this. Oreo Brownies. Seriously, can it get any better?! Oh wait, they're vegan too?! YES, Oreos are one of those "accidentally vegan" foods!
I made these brownies years ago as a non-vegan, using lots of eggs and butter. Initially I wasn't too sure how I could make them vegan friendly. Then I remembered how well my Chocolate Orange Brownies turned out, and thought that with a little tinkering with the recipe I could make something just as tasty, but with oreos to replace the orange.
These brownies are super gooey, but with a nice surprising crunch from the oreo. Seriously, what's not to like about them?! I can't promise promise you that these are in any way healthy (they're probably the very definition of the opposite of healthy) BUT I think that everyone deserves a treat every now and again. Everything in moderation, am I right?
As I'm writing this I'm watching heavy snowfall out the window, dreading going outside later and seriously considering picking up some chocolate on the way home. If it wasn't already clear, I think I may be a chocoholic! It can't just be me that always turns to chocolate whenever there's an inconvenience, be it big or small. For the last few weeks I've been trying to cut down on my sugar consumption, attempting to limit myself to only have sugar on a Friday evening and Saturdays (when I normally do my baking). So far, I've had varying success with this. Last week I broke this attempt when I had a particularly bad and draining day at work, turning to the Coop's "accidentally vegan" donuts (I almost always feature this on my Instagram story when I manage to find a lucrative bag of them!). Long story short, if anyone has any tips on how to cut down on their sugar intake, please let me know!!

Total time: 45 Minutes Plus Cooling Time
Yield: 16 Brownies
Ingredients
- 100g Dairy-free Butter
- 170g Caster Sugar
- 90g Plain Flour
- 30g Cocoa Powder
- 1 tsp Baking Powder
- 150ml Unsweetened Soya Milk
- 2 Vegan Eggs (I used Orgran Egg Replacer)
- 100g Vegan Dark Chocolate (melted)
- 200g Oreo Biscuits (Broken into pieces)
- Preheat your oven to 180˚c. Grease and line an 8-inch square baking tin.
- Beat the butter until soft, then combine with the sugar until light and fluffy.
- Fold in the flour, cocoa powder and baking powder.
- Stir in the soya milk and vegan eggs, then fold in the melted dark chocolate.
- Fold in around 120g of oreo biscuit pieces, then pour the mixture into the tin and top with the remaining oreo pieces.
- Bake for 30-35 minutes, then leave to cool in the tin for 5 minutes before transferring to a cooling rack (still in the greaseproof paper) to cool completely.
- Once completely cooled, cut up into squares and enjoy!
