Caramelised Apple Scones (Vegan)

I seem to have developed a love for scones, and when I thought of a way to bring a little bit of Autumn to them I knew I was on to a winner. These Caramelised Apple Scones are a tasty treat, perfect to eat warm with some jam and butter.

Caramelised Apple Scones (Vegan)


Total time: 45 Minutes (plus cooling time)
Yield: 10 Scones
Ingredients
  • 225g Diced Apples
  • 1 Tbsp Dairy Free Butter
  • 1 Tbsp Light Soft Brown Sugar
  • 250g Self Raising Flour
  • 40g Caster Sugar
  • Pinch of Salt
  • 40g Dairy Free Butter
  • 80ml Dairy Free Milk
  • Extra flour, for rolling
Cooking Directions
  1. Begin by melting the tablespoon of butter and sugar in a pan, then stir through the diced apples and let it simmer (stirring regularly) until the apples begin to caramelise.
  2. Mix the flour, caster sugar and salt in a large bowl.
  3. Stir in the caramelised apples.
  4. Break the butter into pieces, then rub this into the mixture using your hands until fully incorporated and the mixture resembles bread crumbs.
  5. Mix in a little of the milk at a time, until a smooth dough is formed (you may not need all of it).
  6. Flour a clean work surface, then knead the dough for a few minutes.
  7. Roll the dough using a rolling pin until it is 3/4 inch thick, then cut it out using a 1.5 inch round cookie cutter.
  8. Brush the tops of each of the scones with a little dairy free milk, then bake for 12-15 minutes.
  9. Take out of the oven, leave to cool on the baking tray for a few minutes then transfer to a cooling rack to cool completely.
  10. Dust with icing sugar and enjoy!
