I seem to have developed a love for scones, and when I thought of a way to bring a little bit of Autumn to them I knew I was on to a winner. These Caramelised Apple Scones are a tasty treat, perfect to eat warm with some jam and butter.

- 225g Diced Apples
- 1 Tbsp Dairy Free Butter
- 1 Tbsp Light Soft Brown Sugar
- 250g Self Raising Flour
- 40g Caster Sugar
- Pinch of Salt
- 40g Dairy Free Butter
- 80ml Dairy Free Milk
- Extra flour, for rolling
- Begin by melting the tablespoon of butter and sugar in a pan, then stir through the diced apples and let it simmer (stirring regularly) until the apples begin to caramelise.
- Mix the flour, caster sugar and salt in a large bowl.
- Stir in the caramelised apples.
- Break the butter into pieces, then rub this into the mixture using your hands until fully incorporated and the mixture resembles bread crumbs.
- Mix in a little of the milk at a time, until a smooth dough is formed (you may not need all of it).
- Flour a clean work surface, then knead the dough for a few minutes.
- Roll the dough using a rolling pin until it is 3/4 inch thick, then cut it out using a 1.5 inch round cookie cutter.
- Brush the tops of each of the scones with a little dairy free milk, then bake for 12-15 minutes.
- Take out of the oven, leave to cool on the baking tray for a few minutes then transfer to a cooling rack to cool completely.
- Dust with icing sugar and enjoy!
