In honour of this weeks Great British Bake Off theme, biscuits, I wanted to try baking using biscuits and the Lotus Biscoff Spread and Lotus Biscoff Biscuits gave me the perfect excuse to get baking (not that I need one!).

Ingredients
- 100g Dairy-free Butter
- 300g Dark Chocolate (Broken into pieces)
- 1.5 Tbsp Lotus Biscoff Spread (I used the smooth variety but you can use the crunchy one!)
- 125g Lotus Biscoff Biscuits (Broken into chunks)
- 250g Vegan Marshmallows (I used Freedom Mallows cut into smaller pieces)
- Melt the butter, chocolate and lotus biscoff spread in a pan on a low-medium heat, stirring frequently.
- Line a 7-inch square tin with clingfilm.
- In a large mixing bowl, add the biscuits and marshmallows, leaving a handful of each aside to use later.
- Pour the melted chocolate mixture into the mixing bowl, stirring to combine the ingredients.
- Pour the mixture into the tin, spreading it evenly across the tin, roughly levelling it.
- Top with the marshmallows and biscuits that you set aside earlier.
- Transfer to the fridge and leave it to set for at least 1 hour.
- Cut into slices and enjoy!
