Tofu Scramble

Before I made this last week, I had never tried tofu scramble before! I'd seen it floating around on Instagram and Pinterest for a long time but for some unknown reason I'd never gotten round to making it. For my first effort at making this I can hands down say this is a great alternative to scrambled egg on your vegan fry-up and it will become a staple part of my breakfast next time I want a little treat!

Tofu is such a versatile ingredient and even if you're not vegan I suggest getting your hands on some and giving this a go! I've been really loving tofu recently, frying it until it's crispy, baking in it soy sauce and now frying it with some spices to give an awesome tofu scramble!

Tofu Scramble

Total time: 15 Minutes
Yield: 4 Portions
Ingredients
  • 1 Block (400g) of Firm Tofu, drained
  • 1 Tsp Ground Tumeric
  • 1/2 Tsp Ground Cumin
  • Olive Oil
  • Handful of Spinach
  • Salt and Pepper, to season
  • Optional, Nutritional Yeast
Cooking Directions
  1. Heat a little olive oil in a frying pan.
  2. Crumble in the tofu into the pan using your hands to create the egg-like texture.
  3. Stir through the tumeric and cumin until the tofu turns a golden yellow colour.
  4. Add some spinach and stir through until wilted.
  5. If you want, add some nutritional yeast to give it a cheesy taste.
  6. Season with salt and pepper and serve alongside toast, tomatoes, mushrooms or whatever you fancy!
