Chocolate Marshmallow Pie - Non Vegan





First off, I would like to make a HUGE apology for my absolute lack of posts for the past few months - after a few life changes I became much busier than normal and found it hard to find time to bake or write up blog posts. I really hope to be able to post more in the future and will definitely try to! For now, I hope you decide to try out this pie. It may not be the healthiest but it certainly is delicious!

The pie base



Chocolate Marshmallow Pie

Total time: 1 Hour
Yield: 1 Pie, serves around 8 people
Ingredients
  • 150g White Sugar
  • 115g Butter (Room Temperature)
  • 1 Egg (Room Temperature)
  • 100g Digestive Biscuits (Crumbled)
  • 125g Plain Flour
  • 1 Tsp Baking Powder
  • 1 Tub of Marshmallow Fluff
  • 200g Galaxy Chocolate
Cooking Directions
  1. Preheat the oven to 180°C.
  2. Beat together the butter and sugar until light and fluffy.
  3. Add the egg, beating well.
  4. Break up the biscuits using a food processor - or by putting the biscuits in a food bag and using a rolling pin - until they are fine crumbs.
  5. Combine the biscuit crumbs, flour and baking powder.
  6. Add to the butter mixture, folding well.
  7. Divide the mixture into two, then grease an 8 inch glass pan with butter.
  8. Using one of the halves of mixture, spread it around the base of the pan to make the pie base and sides.
  9. Spread the marshmallow fluff over the pie base, then top with the chocolate.
  10. To make the top of the pie, roll the biscuit dough into a ball, then roll it in between two sheets of greaseproof paper until it is at least 8 inches wide, then transfer to the top of the pie.
  11. Bake in the oven for around 20 minutes. You can choose to eat this pie hot or cold - either way it's delicious!
