Rocky Road - Non Vegan

 


I don't know about you, but I love rocky road. Sometimes I stick to the traditional cherries, biscuit, raisins and marshmallows, but often I find myself adding in "unusual" ingredients such as chocolate biscuit bars and dolly mixtures! That's the beauty of rocky road, you can add anything and its still yummy!



I took some of this rocky road to my grandparents, and they loved it! They say it's perfect for an afternoon coffee, and are waiting for my next batch to arrive! Word of warning though: this is a bit of a messy treat, as you're eating it the chocolate may melt a bit so keep a napkin handy!


Rocky Road

Total time: 2 Hours 30 Minutes
Yield: 16 Squares
Ingredients
  • 100g Butter (1/2 cup)
  • 300g Dark Chocolate (Broken into pieces) (2 cups)
  • 3 Tbsp Golden Syrup
  • 140g Rich Tea Biscuits (Broken into chunks) (1 and 3/8 cups)
  • 150g Mini Marshmallows (2 and 1/4 cups)
  • 100g Twix Biscuits (or any biscuit/sweet of your choice) (1 cup)
Cooking Directions
  1. Melt the butter, chocolate and syrup in a pan, stirring until smooth and fully melted. Leave to cool for 10 minutes.
  2. Stir the biscuits and sweets into the melted chocolate mixture until well mixed.
  3. Pour into an 8 inch square tin lined with cling film, spreading the mixture to roughly level it.
  4. Chill in the fridge until hard, approximately 2 hours, then cut into squares.
