Vegan Ginger Cake

In the run up to Christmas I like to start incorporating more "Christmassy" flavours such as ginger, cinnamon, cranberry and all the yummy spices! That's where this ginger cake comes in - I fancied a warming cake with a hint of Christmas!

This cake was made for a non-vegans birthday, to eat with a group of non-vegans, and they all loved it! In hardly any time you can rustle up a birthday cake fit for the cover of a food magazine!

Vegan Blueberry Muffins

So... long time no post! 

A lot of things have changed since I was last uploading. Firstly, a big strain on my time and ability to bake has ended, and that's University! Despite having some bumps along the road, I managed to scrape (the bowl - pun intended) through and achieve a BSc (Hons) Psychology! 

Granny's Ginger Biscuits

 

As the recipe name suggests, this is a recipe given to me by my Granny - and I'm very thankful for it! These ginger biscuits are more like ginger snaps, with the syrup making the biscuits chewy and giving them a "snap". My Granny is one of the people who got me into baking, as a child I used to make these biscuits with her and I remember they would be stored in a tin beside the dining table - I was forever trying to sneakily take one without anyone noticing!
