Vegan Apple Cake

Today I'm sharing with you a recipe for an apple cake that will warm you up from the cold world outside (at least it's cold where I am!). I realise that Autumn is ending and Winter fast approaching, but in the UK it's basically already Winter! Apple's are a staple Autumn/ Winter flavour, so I thought I'd make this apple cake to enjoy as I curl up with my hot water bottle and a book (currently reading this excellent book).

Whilst making this cake I was playing Christmas tunes (Michael Bublé featured of course) and wearing my cosiest socks - did I mention it's cold up North in the UK?! I highly recommend any of you from colder climates try out this cake and dance around to Christmas music like I did!

Vegan Apple Cake

Total time: 1 Hour 15 Minutes
Yield: 1 Cake, Serves 6 people
Ingredients
  • 125g Plain Flour
  • 30g Caster Sugar
  • 30g Muscovado Sugar
  • 1 Tsp Baking Powder
  • 1/2 Tsp Bicarbonate of Soda
  • 1/2 Tsp Ground Cinnamon
  • Pinch of Salt
  • 125ml Dairy Free Milk
  • 85ml Vegetable Oil
  • 65ml Maple Syrup
  • 1 Tsp Vanilla Extract
  • 2 Large Apples, peeled and grated
Cinnamon Sugar Topping
  • 60g Caster Sugar
  • 2 Tsp Ground Cinnamon
Cooking Directions
  1. Preheat your oven to 180 degrees celsius. Grease and line a 7-inch round cake tin.
  2. In a large mixing bowl, combine the plain flour, caster sugar, muscovado sugar, baking powder, bicarbonate of sugar, ground cinnamon and salt.
  3. Gradually add in the soya milk, vegetable oil, maple syrup and vanilla extract.
  4. Mix in the grated apple slowly, until fully combined.
  5. Spoon half the mixture into the cake tin, then top with half the cinnamon sugar mix. Spoon in the remaining half of the cake mixture and then top with the remaining cinnamon sugar mix.
  6. Bake for 50 minutes, or until a skewer inserted comes out clean.
  7. Leave to cool in the tin for five minutes, then transfer to a cooling rack (the cake will be soft, so be careful here!).
