Glazed Lemon Donuts (Vegan)

If you didn't know already, I really enjoy making donuts! These Glazed Lemon Donuts (Vegan) really bring a bit of 'zing' to something that is normally really sweet.

This recipe is based off another recipe I published a few years ago, for Vegan Orange and White Chocolate Donuts - so if you're not feeling lemon right now you might want to give that a go!

Glazed Lemon Donuts (Vegan)

Total time: 45 Minutes (plus cool time)
Yield: 10 Donuts
Ingredients
  • 90g Dairy Free Butter
  • 100g Caster Sugar
  • 170g Plain Flour
  • 1 Tsp Bicarbonate of Soda
  • 120ml Dairy Free Milk (I used soya milk)
  • Zest of One Lemon
  • Juice of Half a Lemon
  • 4 Tbsp Icing Sugar
  • Juice of Half a Lemon
  • Zest of Half a Lemon (to decorate)
Cooking Directions
  1. Preheat your oven to 180ยบ celsius.
  2. Grease your donut pan (I used silicone ones so no greasing was necessary - similar ones here).
  3. Beat together the butter and sugar.
  4. Fold in the flour and bicarbonate of soda.
  5. Mix in the dairy-free milk, zest of one lemon and the juice of half a lemon, stir until fully combined.
  6. Transfer your mixture to a piping bag - top tip, put your piping bag into a pint glass, then fill it up, this makes it easier to pour the mixture in!
  7. Pipe the mixture into the donut pans, filling each donut hole about half full.
  8. Bake for 15 minutes, until the donuts have risen and are firm.
  9. Leave to cool in the pan for a few minutes, then transfer to a cooling rack, turning the donuts over so the bottom side doesn't get soggy as they cool.
  10. When the donuts are fully cooled begin making the icing. Mix together the sieved icing sugar and the juice of half a lemon until a smooth mixture is formed. (You may need a little extra lemon/icing, just use enough until you make a thick, smooth mixture!)
  11. Spoon the icing onto the donuts carefully, topping with lemon zest for decoration.
