Recipe Review: Giant Hummus Mezze Traybake, Bosh!

If you haven't yet heard of Bosh, the London based duo who create epic vegan recipes, where have you been?! Seriously, go check out their Facebook page right now! This recipe for a Giant Hummus Mezze Traybake immediately caught the eye of myself and my boyfriend, and we knew we needed to make it soon!


Reading the comments on their Facebook post, we already knew we wanted to adapt the recipe to suit our tastes. Firstly, we decided to not include rice, as we weren't really sure that it would go great in the recipe. We were also a little lazy and used a Taco Spice Mix, mainly because we really knew that we liked this mix from previous experience and thought it would work well with our ingredients. 

Our ingredients consisted of;


  • 2 Courgettes
  • 1 Aubergine
  • 1 Brown Onion
  • 2 Bell Peppers (we used Red and Yellow)
  • 1 Packet Taco Spice Mix
  • 10 Large Tortilla Wraps
  • Sundried Tomatoes
  • Artichoke Hearts
  • Hummus (we used Mediterranean Hummus)
  • Vegan Cheese (I used Violife Original)
We began by chopping the courgettes, aubergine, brown onion and bell peppers into strips, then coating in the spice mix and a little olive oil before roasting in the oven for 30 minutes, turning the vegetables occasionally.

Next up we lightly oiled a large baking tray, then arranged the tortilla wraps around the tray to cover the base. 

We then arranged the roast vegetables, sundried tomatoes, artichoke hearts and hummus on the tortillas in layers, so everything was evenly distributed. I grated the Violife Cheese and sprinkled this on top, then put the remaining tortilla wraps on the top of the mixture and folding over the edges of the tortillas to wrap up the traybake. 



Bosh recommends using an additional baking tray and placing it on top of the traybake, however we decided this wasn't the best method and instead used cocktail sticks (toothpicks) to keep the traybake together whilst in the oven (see picture). Bosh recommended baking the traybake for 30 minutes, however we found ours was done at around 20 minutes, so just keep an eye on yours and use your initiative to decide when it's done!

Ours served 4 people, and we ate ours alongside the leftover hummus and some homemade guacamole!

I highly recommend you try this recipe and utilise some of the tips I've listed here - I'm definitely going to be trying out some more Bosh recipes in the future as this one did not disappoint in providing a weekday dinner different from the norm!
