Vegan Chickpea "Tuna" Mayo Sandwich

Wow.

Who would have thought that the humble chickpea could me used to make such a delicious sandwich?! I'll admit that I really didn't, but having heard the buzz about chickpea "tuna" mayo sandwiches, I just knew it was something that I had to try for myself! Another thing I love about this sandwich is that it's just plants. Yes, I realise that might sound stupid considering I eat a vegan diet, but what I mean is that there's no fake processed meats in here, just hearty plant goodness! I'm not against fake meats, but I just appreciate that such a simple set of ingredients can create something so tasty!

Another benefit of chickpeas is that they're a great of plant-based protein AND healthy fats! I picked up my vegan mayo from a vegan supermarket in my hometown, but I've spotted them appearing in supermarket and health food stores, so they're easily findable! I know this recipe is going to become a staple for me, as it's super easy to make and last for a few days in the fridge - perfect for prepping my lunches for the week!

This is a super quick and easy recipe to follow, the only part that is a little time consuming is mashing the chickpeas, but that will depend on how strong you are hah! 

Vegan Chickpea "Tuna" Mayo Sandwich


Total time: 20 Minutes
Yield: 4 Sandwiches worth of filling
Ingredients
  • 400g Cooked Chickpeas
  • 2 Tbsp Egg-Free Mayo
  • One Spring Onion
  • 1 Tbsp Lemon Juice
Cooking Directions
  1. Drain and rinse the chickpeas, then pour into a mixing bowl and mash with a fork. 
  2. Stir in the vegan mayo, spring onion, salt, pepper and lemon juice, mixing well.
  3. To assemble your sandwich, butter two pieces of bread then spoon some chickpea mayo mixture onto the bread and top with cucumber and cherry tomatoes. Feel free to use anything you like though, you could add salad, carrot, whatever you fancy!
*This will keep for a 2 days in the fridge.
