These are a real treat and a throwback to the snacks of my childhood -  I believe making rice crispie treats is a staple of learning to bake as a child, and I really enjoyed going back to that and making my own. These Vegan Chocolate Caramel Crispie Treats required sourcing vegan marshmallows, vegan caramel and vegan chocolate chips - all of which are seriously easy to do now thanks to the ever growing amount of vegan products on the market!

Since giving up dairy and eggs, there has been something noticeably missing from my Sunday dinners, and that would be Yorkshire puddings. I'd mastered putting together my own meat free, egg free and dairy free roast dinners, with some good vegan sausages, lots of roast veggies and plenty of gravy. BUT, a key item was missing, and I haven't seen any shops selling vegan Yorkshire puddings so I decided it was time to make my own.

Vegan Wagon Wheels

A wagon wheel is a classic British treat, and something that I haven't had since I went vegetarian 3 years ago. Unfortunately, standard marshmallows contain gelatine, so therefore not suitable for vegetarians (or vegans!). Luckily for us though there are now vegan marshmallows available to buy, and all you need is some jam, biscuits and chocolate and you can make your own!

Vegan White Chocolate Gluten Free Cookies

I am beyond pleased with how these cookies turned out - they were crunchy on the outside but wonderfully soft on the inside. This is also the first time (I'm 99% sure it was the first time!) that I've made gluten free cookies... bonus points, they're also vegan!!

Vegan Cookie Dough Truffles

These truffles are such a treat. Something that you just want to eat 5 in a sitting treat. Or more, you know, if you're feeling wild 😜Seriously though these cooke dough truffles are super tasty and super vegan. I always feel like such a winner when I make tasty vegan treats, not that there's anything too complicated to it, but just that I've succeeded again in proving that vegan doesn't equal boring!

Tofu Scramble

Before I made this last week, I had never tried tofu scramble before! I'd seen it floating around on Instagram and Pinterest for a long time but for some unknown reason I'd never gotten round to making it. For my first effort at making this I can hands down say this is a great alternative to scrambled egg on your vegan fry-up and it will become a staple part of my breakfast next time I want a little treat!

Vegan Mushroom and Asparagus Risotto

This is an easy to follow recipe for a delicious vegan mushroom and asparagus risotto, and as with all my other recipes it doesn't call for any unusual ingredients! Honestly it's the most annoying thing when you come to make a recipe and it calls for some hard to come by ingredient or a really expensive ingredient! The great thing about a risotto is you can really add whichever ingredients you have available - I've made it with aubergine and peas before but you can add in anything you have available (within reason!).

Easy Red Lentil Daal

This recipe for an easy red lentil daal is something to have in your repertoire of quick but tasty recipes that are guaranteed to provide the food fuel you need and also satisfy your tastebuds! Once you get to know the recipe you don't really need to weigh out ingredients, instead you can "eyeball it" and add as many lentils and spices as you see necessary. But for when your starting out, this is a useful recipe to follow to get you used to making it. You can enjoy the daal with some rice, chapati, naan bread or alongside another vegan curry - or however you fancy it!
