Vegan Chocolate Caramel Crispie Treats

These are a real treat and a throwback to the snacks of my childhood -  I believe making rice crispie treats is a staple of learning to bake as a child, and I really enjoyed going back to that and making my own. These Vegan Chocolate Caramel Crispie Treats required sourcing vegan marshmallows, vegan caramel and vegan chocolate chips - all of which are seriously easy to do now thanks to the ever growing amount of vegan products on the market!

I sourced my vegan marshmallows from The Vegan Kind Supermarket, opting for the Dandies All Natural Vanilla Marshmallows which are absolutely DELICIOUS and are large marshmallows, unlike other veggie ones you can get which are tiny little things that you'd need to eat a handful of to be satisfied! Honestly I'm blown away by how good they are and it was hard to not keep snacking on them rather than using them in the recipe!

Vegan Chocolate Caramel Crispie Treats


Total time: 30 Minutes (plus chilling time)
Yield: 16 squares
Ingredients
  • 150g Vegan rice crispies (I got mine from Lidl)
  • One 283g bag, Dandies All Natural Vanilla Marshmallows (they're vegan! I got mine from The Vegan Kind Supermarket)
  • 2 Tbsp Dairy Free Butter
  • 1.5 Tbsp Vegan Caramel sauce (I also got this from The Vegan Kind Supermarket!)
  • 200g Dark Chocolate Chips (Dairy Free)
Cooking Directions
  1. Pour the vegan rice crispies into a large bowl and add 150g of the dark chocolate chips and mix.
  2. In a microwaveable bowl, melt the marshmallows and butter at 30 second intervals, stirring lightly in-between each burst.
  3. Once fully melted, stir through the vegan caramel sauce, then pour the mixture over the rice crispies and stir well until fully incorporated.
  4. Transfer to a 9 by 9-inch square baking tin lined with clingfilm and top with the remaining chocolate chips.
  5. Once cooled (this doesn't take long!), cut into squares and enjoy!
**Optional - drizzle a little of the caramel sauce over the squares!**
