Lotus Biscoff Rocky Road Bars (Vegan)

One of the best things about avoiding dairy/eggs/animal products is when you discover new goodies to use! I've known about Lotus Biscoff Spread being "accidentally vegan" for a few years now, and as Rocky Road is one of my most popular blog posts I was keen to try out a new variation of it - cue Lotus Biscoff Rocky Road Bars!

In honour of this weeks Great British Bake Off theme, biscuits, I wanted to try baking using biscuits and the Lotus Biscoff Spread and Lotus Biscoff Biscuits gave me the perfect excuse to get baking (not that I need one!).

Lotus Biscoff Rocky Road Bars (Vegan)

Total time: 1 Hours 30 Minutes
Yield: 16 Squares

Ingredients
  • 100g Dairy-free Butter
  • 300g Dark Chocolate (Broken into pieces)

Cooking Directions
  1. Melt the butter, chocolate and lotus biscoff spread in a pan on a low-medium heat, stirring frequently.
  2. Line a 7-inch square tin with clingfilm.
  3. In a large mixing bowl, add the biscuits and marshmallows, leaving a handful of each aside to use later.
  4. Pour the melted chocolate mixture into the mixing bowl, stirring to combine the ingredients.
  5. Pour the mixture into the tin, spreading it evenly across the tin, roughly levelling it.
  6. Top with the marshmallows and biscuits that you set aside earlier.
  7. Transfer to the fridge and leave it to set for at least 1 hour.
  8. Cut into slices and enjoy!
