Vegan Date Flapjacks

These are possibly the tastiest flapjacks I have made - the gooey centre from the dates just adds that little something extra, super yummy!

Adding the dates in the middle really does give these flapjacks a little something extra, all you need to do is soften the dates in a little warm water, then mash them with a fork and spread it across your mixture. Super easy and I can't believe I hadn't thought of doing this sooner!

Total time: 1 Hour (plus cooling time)
Yield: 16 squares
Ingredients
  • 215g Soft Sticky Pitted Dates (plus warm water)
  • 160g Vegan Butter
  • 70g Caster Sugar
  • 3 Tbsp Golden Syrup
  • 365g Oats
  • 1 Tsp Ground Mixed Spice
Cooking Directions
  1. Place your dates in a bowl and fill with warm (not boiling) water. Allow the dates to sit for around 5 minutes until they are softened.
  2. Preheat your oven to 180˚ celsius. Grease and line a 7-inch square baking pan.
  3. Melt the butter, sugar and syrup together - I did this in the microwave at 20 second intervals.
  4. In a large mixing bowl, stir together the oats a mixed spice.
  5. Once the butter mixture is melted, gradually pour this into the mixing bowl with the oats and stir to fully combine.
  6. Drain the water from the bowl of dates, then mash the dates with a fork to create a paste.
  7. Pour half the oat mixture into your baking pan and spread out with a spatula.
  8. Spread the mashed date mixture over the oats, spreading it out across the oats, then top with the remaining oats, spreading them out as well.
  9. Bake for 25 to 30 minutes, until the oats are turning golden brown. Remove from the oven and leave the flapjack to cool in the tin until fully cooled.
  10. Cut into squares and enjoy!
